Inspired by Scottish and Irish Whiskey blending techniques. Doc Swinson’s blended two different bourbon whiskeys, one with a high rye mash-bill and the other with a higher corn. This combination was then finished in three distinctly different casks from Europe, selected for their age and character. The bourbon finishes in Cognac, Oloroso sherry and Pedro Ximenez Sherry casks from 3 months to over 16 months, layering in a host of flavors from chocolate, honey, orange peel, fig, golden raisins, and crème brûlée. Each cask is then tasted by our master blender and selected to be married together in our ex-cognac marrying vats called Foeders.
These large oak tanks the size of a car allow the spirits to marry and balance, resulting in a well-balanced and smooth bourbon ready to be bottled and enjoyed. Mash-Bills:
