The haiku is classified as a tokubetsu junmai – “tokubetsu” meaning “special” and referring to the extra care taken in preparing the rice. The rice used to brew the haiku is polished up to 60%, which is 10% more than our traditional junmai. A slower and carefully controlled fermentation gives Haiku an elegant flavor and a refined palate.
