Whiskies are distilled from grain: barley, corn, rye, wheat, even oats. The grains are prepared in various ways, including malting and drying, to convert starches into sugars. Water is added to create a “mash”, which is fermented to convert the sugars into beer-like alcohol. Distillation can be on either potstills or column stills. Whiskies include single-malt scotch, bourbon, and a wide range of blended whiskies: Scotch, Canadian, American. Low Gap will include whiskies made from several grains.
