Svöl Aquavit will take you on a journey through the varied regional traditions of Scandinavia’s beloved spirit. The Svöl range pays homage to aquavit’s centuries of history. We partnered with experts in Scandinavian food and drink to create the nest examples of aquavit made in the regional styles of Denmark and Sweden. The botanicals were selected and sourced by chef Gunnar Gíslason, owner of Michelin-starred Dill Restaurant in Reykjavik, and Jonas Andersen, Beverage Manager for MeyersUSA. The distillation and botanical extraction techniques were developed in partnership with Allen Katz at New York Distilling Co.in Brooklyn, NY, where Svöl is made.
Swedish aquavits are typically made from grain-based spirit and are often un-aged, although some are aged for short periods of time. The main differentiator is that Swedish aquavits tend to lean on slightly sweeter botanicals like dill and fennel in addition to caraway. Our Swedish-Style aquavit features fresh dill which is cold infused before the other botanicals are added, and fennel that’s been cracked and roasted to release its flavor and aroma. The result is a brighter flavor profile that’s perfect in refreshing cocktail experiments.
