The nose opens with strong vanilla and sweet fruit notes followed by hints of grain. Black pepper rises on the pallet, overtaken by vanilla fudge and just a trace of raisins. The smooth finish of Watershed is warm and comforting, just like honey on warm buttered toast.
Tipperary Boutique Distillery was created to distil a unique Irish whiskey from our own barley, grown on Ballindoney farm in County Tipperary.
Our stills are not yet built, however our first expression (the Rising), was released in March 2016. We searched Ireland for a mature whiskey which would reflect the style of the spirit we will make in Tipperary, and we specifically selected these casks to bottle and release as our inaugural expression. Our own spirit will have to be aged in wood for at least three years and a day before it can be called “whiskey”. Luckily, after 200 years of watching our barley ripen for harvest each year, patience is something we have in abundance at Ballindoney farm. Wait with us, put your feet up, and have a dram of the Rising while you wait.
The Ahearn family have lived and farmed at Ballindoney, Co. Tipperary for as far back as local records exist, over 200 years. More than five generations are known to have farmed this land:
Patrick Ahearn: 1800 – 1864 | William Ahearn: 1861 – 1914
Patrick Ahearn: 1901 – 1978 | William Ahearn: 1942 – present
Patrick Ahearn: 1978 – present | William Ahearn: 1983 – present
Historically, a mixed farming operation, over the years the farm has been refined until today it specialises solely in crop production.
The farm is located within the famous Golden Vale of Ireland, a rich vein of land that spreads across Limerick, Tipperary and Cork. This land, as well as being beautiful, has rich fertile soil and the perfect conditions for producing Ireland’s finest crops.
Tipperary is home to world famous water and Ballindoney Farm is home every year to spectacular fields of golden barley. Our unique inheritance of the purest water and barley is the first step in our passionate pursuit of a spectacular Single Malt Irish Whiskey, which only Tipperary can call its own.
