Pulled right from the dream book of Doc’s master blender, this rye whiskey is a blend of two different rye whiskeys; one with a mash-bill of 95% rye and the other 51% rye. After aging for three to six years in American white oak, this blend of whiskeys is added to our traditional Solera System of our very own blend of ex-rum casks from four distinctly different tropical distilleries.
Soleras are truly unique, using a large number of barrels in which only a small portion of the spirit to be bottled is drawn from the oldest set of barrels in the solera. The small portion of whiskey drawn is then replaced by an equal portion from the next oldest barrels. This process continues until the youngest set of barrels in the solera is then topped off with more of our initial blend of rye whiskey. This system continually ages and mixes each cask together over time resulting in a more complex and balanced whiskey as the years go by.
The resulting whiskey is spicy, sweet, bright, and full. We’ve even found through tastings with a number of bourbon societies and non-whiskey drinkers, that they enjoy this as much as the rye fans do. Mash-Bills:
